Potato muffin chili stuffin
| 2 cups | mashed potatoes |
| 1 | egg |
| 1/3 cup | vegetable oil |
| 1 2/3 cups | flour |
| 1 cup | graded swiss cheese |
| 3 tablespoon | sugar |
| 3 teaspoon | baking powder |
| 1 teaspoon | salt |
| 1 cup | canned chili |
Steps
- Heat oven to 400 degrees. Line 12 medium muffin cups with baking cups.
- Stir mashed potatoes, beat in egg and oil.
- Stir in remaining ingredients until moist.
- Fill muffin cups 1/4 full, and top with a 1-2 tablespoons of chili, and top off with muffin mix. (cup should be about 3/4 full)
- Bake until golden brown, about 20 minutes.
